Today I happened upon what is quite possibly the perfect poached egg over at b3ta.com. What you do is drape a layer of (microwaveable!) cling-film/"Saran wrap" over the inside of a cup, drop in an egg (salt and pepper optional), and wrap the film over the egg. You can either tie the film or clench it with some tongs. Submerse the egg in simmering water for 5 to 6 minutes (ymmv). Then set the egg free on a plate (without scalding yourself), garnish and serve.
I'm still experimenting with this, as I originally doubled up the plastic wrap, which is probably overkill. Kelley has some misgivings about waste and possible carcinogenic badness, so I'll have to do some research. But damn it tastes good! Be sure to use premium eggs for this, though. This method is probably not suitable for young kids without adult supervision, for obvious reasons.
